I did a lot of walking last week and this past weekend, so knew I needed to get some runs in this week. I had 2.5-3 miles penciled in for last night. I barely made it for 2. They were quite possibly the longest 2 miles of my life. My legs felt like they were filled with lead the entire time. I kept looking at the timer on the mill and willing it to be more than what it read. I haven’t had a run that was physically hard to finish in a long time. Yesterday’s run took the cake though. I’m blaming the difficultly on the IVF meds. Wrong or right those meds are the only thing that’s changed within a weeks time. A week ago 2 miles was easy peasy and 3 miles was starting to feel awesome. Being tired and having lead legs is only temporary though. So if more walking and less running is what the next few weeks hold, so be it. I’m jiggy with that.
I know I say this about every meal, but dinner last night was the bomb.com. I followed Caitlin’s recipe (that I was supposed to fix last Tuesday for dinner…..) for Breaded Tofu and it was delicious.
I also love that we have left overs! These are great cold (or warmed) over a salad for lunch the next day.
And since you asked so nicely, I’ll even share a photo of our snazzy hi-tech tofu press.

Weekly Menu for July 8th ~ July 13th (better late than never, no?)
Monday- Breaded Baked Tofu, roasted veggies, sweet potato.
Tuesday- Leftover Breaded Baked Tofu over salads
Wednesday-Chipotle Bowls with fresh guacamole
Friday- Stir-fry with brown rice and Trader Joe’s frozen vegetable egg rolls
Saturday-Mushroom Ravioli with roasted veggies or side salad
This week is all about keeping it simple but tasty. We have so much going on this week and I can’t be tied to the kitchen for an hour or more every night. Remember, each of these meals are interchangeable!
